Almond Fish

 

The essentials

Ingredients

  • 400g fish of your choice – we’ve used 200g salmon and 200g cod
  • 1 egg
  • 200g ground almonds (you will have approx 75g leftover to discard)
  • 1 tbsp paprika
  • Pinch of salt and pepper
  • 15g almond flakes (optional)

Serves 4

 

Method

Preheat the oven to 180°. Whisk the egg in a bowl. Pour the ground almonds onto a plate and mix in the paprika.

Dip each piece of fish into the egg and cover fully. Then place each piece of fish into the ground almonds one at a time and ensure both sides are covered.

Place the covered pieces of fish into a baking tray and salt and pepper to taste. Sprinkle the almond flakes on top if you wish. Once complete, cook in the oven for 20 minutes, until the fish is cooked through.

 

A little bit extra

We cooked this with the lovely 6 year old Evie. She absolutely loved making the meal for herself, and for us! This is a great way to get kids into the kitchen. Let them get messy and feel what real food is all about. These are the new fish fingers – 100% natural and 100% made by your kids!

We’ve paired our fish with mushy peas and our sweet potato fries – a perfect combo!
