Banana and Blueberry Pancakes

The essentials

Ingredients

  • 1 ripe banana
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 2 tablespoons coconut oil
  • Handful of blueberries

Serves 2

Method

Blend the banana, eggs and vanilla extract in a blender or nutribullet.
Place a little of the coconut oil in a hot pan. Pour about 2 tablespoons of the pancake mixture into the pan.

Place 2 or 3 blueberries on top of the mixture. Cook until air bubbles form on the top and the bottom is golden brown, then flip to cook on the other side.

Continue until all the mixture has finished and you have a plate full of delicious pancakes.

A little bit extra

For those with a sweet tooth this is a great way of adding protein in to your breakfast. They are great to make in the morning or even the night before to have on the go. They are yummy by themselves or can be enjoyed with some Greek yogurt or strawberry/raspberry dressing (simply blend up the berries to a dressing consistency. Add a teaspoon of honey if needed but often the berries are sweet enough on their own!)

Eggs are a great source of protein and fat which help keep us fuller for longer. And despite what we were told in the 90’s – eggs do not increase blood cholesterol levels so eat away!
