Berry Crumble

 

The essentials

Ingredients

Filling:

500g frozen berries

1.5 tbsp maple syrup

Crumble:

100g ground oats

120g ground almonds

20g oats

4 tablespoons coconut oil

1 tbsp honey

Serves 6-8

 

Method

Preheat oven to 180°

Place the frozen berries and maple syrup into a pan on a medium heat on the hob for 15 minutes, until the fruit is soft and hot and lots of liquid has been produced.

Combine all the crumble ingredients in a bowl and mix together with your hands until it is the consistency where all the ingredients combine together to make a ball.

Place the fruit in an oven dish and crumble the crumble mixture over the top.

Place in the oven for 25 minutes (until the top is golden brown)

 

A little bit extra

This is a perfect gluten free, dairy free, refined sugar free dessert that can be enjoyed (almost) guilt free. Perfect if you need to whip something up relatively quickly for Friday night dinner.  The recipe includes raspberries which contain antioxidants which play a role in reducing inflammation. Raspberries are also a good source of vitamin C, a great antioxidant which helps build up a strong immune system.
