Red Cabbage

 

The essentials:

Ingredients: 

  • 1 Red onion
  • ½ red cabbage
  • 5 tablespoons apple cider vinegar
  • 3 tablespoons honey
  • 1 apple – peeled and chopped
  • 3 tablespoons coconut butter

Serves 4

 

Method:

Preheat the oven to 180°.

Chop up the red onion and fry off with 1 tablespoon of coconut butter until the onions are soft.

Chop up the red cabbage, add to the pan with the apple cider vinegar and honey and mix well. Heat in pan for 15 minutes.

Mix in the chopped apple.

Place all the ingredients in an oven proof dish with 2 tablespoons of coconut butter and ½ litre of water. Put into the oven uncovered for approximately 45-60 minutes then stir and cover for another 45-60 minutes.

 

A little bit extra:

A really great side dish with meatballs or mushroom burgers.
