Overnight Oats

 

The essentials:

Ingredients:

  • 85g rolled oats
  • 340ml coconut milk (full or half fat)
  • 1 passion fruit
  • Half a small apple – grated
  • 30g raisins or sultanas
  • 2 tsp cinnamon
  • 80g pomegranate seeds

 

Serves 5

Method:

Combine the oats and coconut milk in a mixing bowl.

Add the grated apple, passion fruit, raisins or sultanas and cinnamon, mixing all ingredients together.

Place in the fridge overnight or for at least 6 hours.

Sprinkle the pomegranate seeds onto each portion as required. You can add them to the main mix as well, but we feel they taste more crisp and fresh this way!

 

A little bit extra…

Rolled oats are a great source of complex carbohydrates: once you eat them, your body will digest them very slowly to give you consistent, controlled energy release throughout the day.

This mix will last in the fridge all week, so make it on a Sunday evening and there’s your no fuss breakfast for the week!

 

One serving of Overnight Oats will give you the following goodness (calculated using full fat milk):
