Chia Breakfast Bites

 

The essentials

Ingredients

  • 3 tbsp chia seeds
  • 125ml almond milk
  • 120g oats – ground
  • 30g ground almonds
  • 3 ripe bananas
  • 1.5 tsp cinnamon
  • 35g almond butter
  • 70g chopped dates
  • 70g raisins (you can also substitute this for chocolate chips if you wish, for a different taste!)

Method

Pre-heat the oven to 180°.

Add the almond milk and the chia seeds together into a small bowl, ensuring the chia seeds are mostly covered by the almond milk. Wrap cling film over the top of the bowl and set aside while you make the rest of the mixture.

Mix all of the other ingredients together into a mixing bowl until well combined. If you don’t have ground oats, simply put your normal oats into a nutribullet or food processor for a few seconds to blitz them up.

After about 10-15 minutes, check your chia mix and it should be a jelly like consistency, with the almond milk absorbed into the seeds. Pour the chia mix into the other ingredients and combine the mixture.

Line a baking tray with baking paper and spoon out approximately 1.5tbsp of the mixture onto the tray. Pat it down with a fork to flatten into a cookie shape.

Place in the oven for 15-20 minutes, until you can put a knife in and it comes out clean.

Allow to cool on a baking rack and enjoy!

 

A little bit extra

There is nothing raw in this mix, so you could even eat it raw with Greek yogurt or as a cookie-dough style dessert! The sweetness comes from the natural sugars in the dates and raisins, so it’s a great start to your morning, or snack for throughout the day.

Bananas in these Bites give you a great source of fibre, together with the oats. Banana also provides us with powerful antioxidants to keep our bodies functioning to max levels!
