Chocolate Soufflés

The essentials

Ingredients

  • 2 tbsp coconut butter
  • 120g dark chocolate (85% minimum)
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp coconut milk
  • 2 whole eggs (separated whites and yolks)
  • Pinch of cream of tartar
  • Pinch of salt

Method

Preheat the oven to 180° and grease 4 ramekins with coconut butter.

Combine 100g chocolate (leave about 4 squares aside) and coconut butter into a large glass or pyrex bowl.

Bring a pan of water to the boil and reduce to a simmer. Put the bowl on top to melt the ingredients, stirring occasionally.

Remove from the heat and stir in the vanilla extract, maple syrup and coconut milk.

Whisk in the egg yolks one at a time.

In a separate bowl, whisk the egg whites until the mixture creates stiff peaks. Fold the egg whites into the chocolate mixture.

Finally, fold in the cream of tartar and salt.

Pour in the mixture until half the ramekin is filled and put a little square of chocolate in the middle. Fill the rest of the ramekin with the mixture.

Put in the oven for 8 minutes.

This dessert tastes great after any meal – serves you that ‘something sweet’ we’re often craving. And the good thing about them is the ramekins can be prepared in advance and put in the fridge until you’re ready.
