Strawberry & Banana Muffins

 

The essentials

Ingredients 

  • 4 ripe bananas
  • 4 eggs
  • 2 tbsp almond butter
  • 2 tbsp coconut oil (melted)
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 3 tbsp coconut flour
  • 50g ground almonds
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 150g strawberries

Serves 14

Method 

Preheat the oven to 180°

Mash the four bananas with a fork. Place the mashed bananas, 4 eggs, almond butter, melted coconut oil, almond milk and vanilla extract into a large bowl and combine thoroughly.

Add in the dry ingredients – coconut flour, ground almonds, bicarbonate of soda and baking powder and combine until the mixture is smooth.

Chop the strawberries into small pieces and fold through the mixture.

Line a muffin tray with muffin cases and spoon in enough mixture so they’re almost full (remember they will rise!)

Place in the oven for 15 minutes or until you place a knife in and it comes out clean.

 

A little bit extra

Strawberries are a great source of vitamin C and are a good source of fibre – meaning they’re helpful for looking after your immune and digestive systems. They add an a bit of a bite for these very sweet muffins. What’s amazing is that there is no added sweetener in these muffins, the sweetness comes solely from the bananas.
