Banana Choc Chip Muffins

 

The essentials:

Ingredients:

  • 240g ground almonds
  • ½ tsp bicarbonate of soda
  • 2 tsp baking powder
  • 5 tbsp maple syrup
  • 2 bananas – chopped
  • 2 medium eggs
  • 100g dark chocolate chips (or dark chocolate cut up into chips!)
  • 75g butter/ coconut butter or oil
  • 1 tsp vanilla extract

Serves 14

 

Method:

Preheat oven to 175°.

Combine butter and maple syrup in mixer/slowly beat together.

Once combined, slowly add banana, vanilla extract and eggs.

Slowly add in the bicarbonate of soda, baking powder and ground almonds.

Once combined, add in the chocolate chips until mixed throughout.

Line a muffin tray with cases and fill each case with 1-2 tablespoons of the mixture.

Put in the oven for approximately 20 minutes, or until you can put a knife in a muffin and it comes out clean.

Almonds are high fat foods and have been found to be beneficial in reducing risk for heart disease, such as lowering LDL cholesterol levels. Eating almonds can promote optimal heart health.
