Sweet Potato Fries

 

The essentials:

Ingredients:

  • 3 medium sweet potatoes
  • 1 tsp paprika
  • Salt and pepper
  • 1 tbsp coconut oil

Serves 3

 

Method:

Preheat oven to 180°.

Cut the potatoes into chips (no need to peel). Place them on a baking tray.

Cover them fully with the oil, paprika and salt and pepper – mix it all together in with your hands.

Place in the oven for 45 minutes then shake them up a bit by moving the tray side to side and put them back in the oven for another 45 minutes (depending on the size of the potatoes cut).

These are a great side to pretty much any dish. Lucy loves them with everything!!

Sweet potatoes are a great complex carb source. The natural sugars are slowly released into the bloodstream, creating that controlled energy release rather than a spike and crash as we explain in our Introduction to Macros post.
