Chicken Skewers

The essentials

Ingredients

  • 1 red onion
  • 1 red pepper
  • 2 large chicken breasts (cut into cubes)
  • 1/2 tsp smoked paprika
  • 1/4 tsp cinnamon
  • Metal skewer sticks

Serves 2

Method
Preheat oven to 180°.
Rub the spices into the chicken pieces with your hands.
Cut the onions and peppers into approximately 1 inch pieces.
Place the onions, peppers and chicken on to the skewers in the order of your choice.
Place skewers over a roasting tin for 20 minutes until chicken is cooked and still moist – ensure it fully cooked through.

A little bit extra

Chicken Skewers are an easy dinner and can pretty much be served with anything. We love serving them with our stuffed peppers or sweet potato fries.
