Balsamic and Tahini Wedges

The essentials:

Ingredients:

  • 3 large sweet potatoes
  • 2 tbsp coconut oil
  • 1 tbsp paprika
  • salt and pepper
  • 1 tbsp tahini
  • 100ml balsamic vinegar

Serves 4 as a side dish

Method:

Preheat oven to 180°

Chop the sweet potatoes into wedges and place on a baking tray with the coconut oil, paprika and salt and pepper and cook in the oven for an hour.

Whilst they are in the oven put the balsamic vinegar in a saucepan on a medium-high heat and bring to the boil. Lower the heat and allow to reduce until it is at the consistency you would like, it should only take a few minutes. Keep an eye on it as you don’t want it reducing too much.

Once the sweet potatoes are ready remove them from the oven, place in a dish and drizzle the tahini and balsamic reduction over them and serve.

Tahini is a great source of calcium. It is made from sesame seeds which are great healthy fats so adding the tahini is a great way to get fat into your meals for a healthy, balanced diet.
