Mediterranean Chicken

The essentials

Ingredients 

  • 10 chicken pieces (breast or thighs)
  • 3 cloves of garlic
  • 3 tbsp apple cider vinegar
  • 3 tbsp melted coconut oil
  • 60g pitted black olives
  • 60g pitted green olives
  • 70g capers
  • 85g dates cut lengthways in half
  • 300ml dry white wine
  • 2 tbsp maple syrup
  • Salt and pepper

Serves 10

 

Method
Place the chicken in an oven dish with all the ingredients apart from the wine and maple syrup and marinade over night (this is not necessary if you don’t have time – it can all be done together).
When ready to cook mix the wine and syrup together and then pour over the chicken.
Preheat the oven to 180° and place the chicken in the oven for an hour (or until cooked through).

This is such an easy dish to make so it’s perfect for a dinner party – it’s always a winner! Perfectly paired with our sweet potato wedges.

Olives are a great source of fat and provide a good source of iron and vitamin A which are important for healthy hair and skin and for protecting our immune system.
