Cottage Pie

 

The essentials:

Ingredients:

  • 2 white onions
  • 1 carrot
  • 800g tomatoes, chopped
  • 800g minced beef
  • 2 cloves garlic
  • 3 tablespoons coconut oil
  • ½ teaspoon nutmeg
  • 1kg sweet potatoes
  • Salt and pepper

Serves 8

 

Method:

Finely chop the onions and fry in 2 tablespoons of coconut oil until the onions are soft.

Chop the carrot up finely and add that to the onions along with the crushed garlic cloves.

Add the beef with the final tablespoon of coconut oil and keep stirring to brown the meat.

Once all the meat is brown, add the tomatoes.

Simmer on a low heat for an hour.

Peel and cut the potatoes into equal sizes. Boil until soft, sieve and then mash until smooth and season with salt and pepper.

Pour the meat into a large oven proof dish and place the mashed sweet potatoes on top. Place in the oven for 30 minutes or until the top of the potato is starting to crisp/brown.

This warming dish is great for our wonderful British weather and can be enjoyed all year round.
